Chocolate chip, coconut and oatmeal cookies – all without the consequences

This is a recipe (tweaked for those who love to eat cookies but can’t eat gluten) that was fashioned by my great grandmother, whom I affectionally called Ma. Unfortunately, she passed in 2018 but she had given my grandmother (Grandma) her recipe years prior. She referred to them as “Come and Get ‘Ems” because the kids loved them. Couldn’t keep them on the baking pan for very long at all. Upon my grandmother’s passing, my mom got the recipe and so, too, did I.
In order to ensure they’re gluten-free and celiac safe, I’ve opted for ingredients without gluten or lactose. I’ve always had a preference for margarine over butter. I’ve never been a fan of cow’s milk, even before we made the switch.
The chocolate chips themselves are vegan and gluten-free but still have the same taste (I know, I eat them straight out of the bag sometimes). Even my son doesn’t notice a difference.
Keep an eye on your oats, though. Sometimes there’s a risk of cross-contamination.
The only quarry I have with this recipe is the recent discovery of a corn allergy within my family and xanthan gum uses corn gluten. I will be posting more when I find a good alternative. For now, the risk of impact is very low with the xanthan gum and won’t affect most people with celiac or gluten intolerances, but always be aware of what you’re eating!
Ingredients

1 cup margarine
1 tsp vanilla
1 cup brown sugar
½ cup hot water
1 ¾ cup rice flour
1 tsp xanthan gum
1 tsp baking soda
1 tsp baking powder
2 cups gluten-free instant oats
½ cup sweetened coconut flakes
3/4 small package vegan chocolate chips
Instructions

Preheat the oven to 375 degrees Fahrenheit.

Mix the wet ingredients together in a bowl then add the dry ingredients into the same bowl.
Roll the dough by hand into balls and place them on a cookie sheet. Do not worry about flattening it.
Bake for 18 minutes.
You can also substitute the chocolate chips for raisins following the same guidelines, just bake them for 22 minutes.
